Pomegranate Shrub

This ruby-red version of a traditional shrub—a blend of fruit, sugar and vinegar—combines antioxidant-rich pomegranate juice with Amari Everyday Calm, for a bright, refreshing way to ease inflammation and tame tension. We used organic cane sugar for a more traditional version; you can substitute honey or agave, or sweeten to taste with monkfruit for a sugar-free version.  
For more panache, serve over pomegranate ice cubes—fill ice cube trays with pomegranate seeds and water, then freeze. Enjoy!

Makes about 1 pint (8 to 16 servings)

Ingredients
1 cup pomegranate juice
1/2 cup raw apple cider vinegar
1/4 cup organic unrefined cane sugar
8 packets Amari Everyday Calm drink mix
1/4 cup pomegranate seeds (optional)

Combine pomegranate juice, apple cider vinegar and sugar in a pint-sized mason jar with a tight-fitting lid. Seal tightly, then shake vigorously until all ingredients are mixed well. Refrigerate for four hours until chilled, or overnight, to allow flavors to blend.

To serve, fill individual tall glasses with ice. Add one or two ounces of shrub and fill with sparkling water. Top with pomegranate seeds, if desired, and serve immediately. Or combine one ounce shrub with one ounce vodka or gin in a cocktail glass, add sparkling water and pomegranate seeds, if desired, and serve.
